Ingredients:

  • 500g boneless, skinless chicken breast or thighs, minced
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon ginger paste
  • 1 tablespoon lemon juice
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt, to taste
  • 20-25 bamboo skewers, soaked in water for 30 minutes
  • Fresh cilantro, for garnish

Instructions:

  1. In a large mixing bowl, combine the chicken, onion, garlic, ginger paste, lemon juice, ghee or oil, cumin powder, coriander powder, garam masala powder, cayenne pepper (if using), and salt. Mix well.
  2. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken mixture onto the bamboo skewers, leaving a small space between each piece.
  4. Grill the kababs for 5-7 minutes per side, or until they are cooked through and slightly charred.
  5. Serve hot with your favorite sides, such as naan bread, rice, or salad. Garnish with fresh cilantro.
